DESCRIPTION: Aged for only two weeks, this medallion has a thin, bloomy rind.with a firm and dense paste and a very mild flavor with a hint of mushrooms. If matured up to 8 weeks, it ripens from the outside in, becoming supple and spreadable. The flavor transforms from mild to savory, to almost meaty.
